Chocolate Zucchini Cake With Cream Cheese Frosting

This cake is moist and fudgy, a great way to use up some of your summer zucchini. Would also be good with chocolate ganache, a thin white icing or glaze or even just sprinkled with chocolate chips while hot. *i used hershey's special dark cocoa- it's a mix of dutch and regular unsweetened so i think either would work here -- posted by newmama

Persian Rice With Mung Beans

"Rice with mung beans (maash polow) is a delightful summer dish, light, simple and delicious. Mung beans are good in soups, salads and are super delicious when cooked with rice, sauteed onions and a heavy pinch of turmeric, slowly over low heat. I like to use equal portions of rice and beans for this dish. If you like you can add another 1/2 cup of rice to the recipe." Along with the serving options I also think dibs (date syrup) and Balkan yogurt separately would work well together with this dish but have yet to try. That way it would make it more of an Iraqi version since the best date syrup comes from Iraq. Recipe modified from http://turmericsaffron.blogspot.com -- posted by UmmBinat

Another Chicago Hot Relish

I don't know the origin of this recipe, but an old friend gave me a jar of this relish about 30 years ago, and I loved it. It was from her that I got this recipe, and have been making it ever since. To peel the tomatoes, just dip them in boiling water for a few seconds, and the skins will come right off. I do not hot-water bathe the filled jars, and have never had a problem, nor have the jars ever failed to seal, but your jars must be washed, sterile and hot. The same goes for the lids. However, that said, use your own judgement. The recipe she gave me did not specify what kind of hot peppers to use. I use 10 jalapenos, but that amount is flexible, depending on your heat tolerance. It also did not specify white or cider vinegar. I use 1/2 of each. Hope this is helpful. Enjoy! -- posted by arroz241_11561377

Coconut Sticky Rice in Banana Leaves

These tasty treats are something like tamales in their construction (not their taste!) and are great for on-the-go snacking or as a dessert. Don't let the prep time scare you... most of it is soaking time. My dad bought these for me as a special treat from our favorite Laotian restaurant when I was younger, and when I ventured out on my own I tried making them myself. I went through several recipes I found online with no success... I couldn't get the rice as glutinous and soft as the ones from the restaurant! Eventually I broke down and asked the owner what the secret was: cook the rice beforehand, and cook it again with the "sauce" to really get the gluten going. I've made this countless times since, and it's perfect! -- posted by Barucha

In the Kitchen Information Forum you can find a short glossary of Ethiopian food terms. The word WAT means a stew, and the basic spice mixture used in almost all stews are BERBERE. The recipes are economical, easy and tasty, and always served with INJERA (flatbread). If you type "Injera" in the search line on Food.com you will find more than a dozen recipes. I have waist length hair and this keeps my length looking shiny, soft to the touch and less frizzy. If you have very fine hair wet your hair down and leave it in for two hours. This is excellent on course hair as well. I have a girlfriend with African heritage and it works wonder on her hair. You can substitute a jar of plain banana babyfood for the bananas. Shrimp Fried Rice My Way

From Kraft Food & Family. I adjusted this recipe a little. Very versatile. Original recipe called for 1/2 cup of peas which my husband hates. You could add any vegetable or seafood you wanted which is why I liked this one. -- posted by smartblonde #2

Onion Gratin With Fresh Thyme

A mixture of both yellow and red onions look quite attractive in tis bake of "blooming" onions. Look for smaller sized onions that are better for placement in the casserole dish. -- posted by Abby Girl

Banana Peach "applesauce"

Have had a lot of bananas around leading to a profusion of banana-related creations. I made this instead of traditional applesauce to use up a few bananas and complement some grilled pork chops. I don't have any lemon juice in the recipe, though I can imagine that it may brown a bit in the fridge without this. Ours didn't last long enough for that to happen, though. I also highly recommend this as a topping for vanilla ice cream. -- posted by Tlharin

Caramel Apple Strata

A recipe from my TOH magazine that looks so delicious. Plan to make for our Christmas morning brunch, but would be good for breakfast or brunch anytime. This is made the night before, so good when guest are staying, just get up and take it from refrigerator 30 mins before baking. -- posted by diner524

From my father-in-law's kitchen to yours. These beans are very hearty and a little sweet. This recipe feeds a large crowd, but the pan is usually empty by the end! -- posted by Ala_gal_82

Southwestern Sweet Potatoes and Black Beans

This is my modified version of "Sweet Potatoes with Warm Black Bean Salad" (a recipe from Eatingwell.com). A great vegetarian dinner or side dish to grilled meats. I added a bit more spice to the original recipe and we love it. -- posted by FloridaNative
