Wild Mushroom Stroganoff
Traditionally, stroganoff is served with rice, but for a different type of stroganoff, try serving this with a very thick wholemeal bread and some lightly salted butter. This recipe will serve up to 6, but since it is so delicious, realistically you will only get around 4 servings out of it! Sometimes it is a nice touch just to swirl a little cream onto each plate after the stroganoff has been served, then finish off with the freshly chopped parsley. Delicious! -- posted by English_Rose

16 Bean Soup
This is a great recipe to start in the morning and have ready when you come home. I love the packages with 16 kinds of beans...they make the best bean soup. They don't come with a prepackaged mix or anything like it sounds--the 16 bean soup mix is just a package of 16 kinds of beans. We lived in Des Moines from 1974-76 and discovered Bishop's Cafeteria at Merle Hay Mall. Anytime we had out-of-town guests, they always wanted to dine there. And of course, everybody had to have a slice of Bishop's Chocolate Pie for dessert. This is a copycat recipe that my mother-in-law gave me many, many years ago. Though I usually make this "light," I did include a couple of optional enrichments. A note about sweetener: I used to make this with agave nectar but am now using Truvia. Crock-Pot Ricotta
Make your own ricotta cheese in your crockpot! The acid you choose will affect the final flavor. Apple cider vinegar will give a sharper tang, a distinct odor, and a subtle golden color; this is probably best for savory applications. Lemon juice will give a subtler flavor and will not curdle as abruptly. For the cleanest, purest flavor, use distilled white vinegar. Creamed Hamburger
This might as well be titled, "Mom's Hodge-podge Home-made Hamburger Helper." Although I seldom cook with hamburger, this is a wonderful example of how mom taught us how to improvise, adapt, and experiment to the nth! This one's being added for posterity! Sour Cream Coffee Cake

Amish Corn on the Cob
One of my dear friends, Pam, comes from an Amish background and each Summer we head to Millersburg, Ohio to visit her relatives. One visit was during the first Sweet Corn harvest and this dish was served at their table. Initially, I was sceptical about it, having never had my corn served this way...that is, until I ate it and then I couldn't get enough! That was 30+ years ago, and each Summer I wait with the greatest of anticipation for the first Sweet Corn to become available so I can have this simple feast. It's hard for me to have corn any other way now, as it always seems that "something is missing." Note: The servings for an individual are two ears of corn per person. No-Bake Strawberry Cheesecake
Easy on the waistband-and on the guilt. Planning tip: Can be made (without the strawberry topping) up to 3 days ahead. Refrigerate covered. Prepare Topping just before serving.
